Summer recipes

With the warm weather in full swing, our cravings for fresh, summery foods are stronger than ever. We love to keep the fridge stocked with healthy, refreshing snacks like delicious guacamole , or a zesty pico de gallo. Both dips are perfect for simple snacking with tortilla chips, but the best part is they can double as toppings for tacos, fajita, and even burgers (hello grilling season!).

We dove into the summer mood with some easy-to-make, but incredibly tasty, chicken tacos using the guacamole and pico de gallo as a base. These two super simple recipes make use of the same base of fresh ingredients, making them easy to make at the same time, just swapping out the main portion of avocado and tomato’s respectively. (Plus, a bonus margarita recipe to sip while you eat!) We hope you love them as much as we do - happy snacking!

Guacamole

& Pico de Gallo

Recipe Base Ingredients (make twice if making both recipes):

-1/4 of a red onion, diced
-1 full lime, juiced
-1 cup fresh cilantro, chopped
-Salt and pepper

For Guacamole:

3 ripe avocados, mashed (you can keep it as smooth or chunky as you like)

(Optional: chopped tomato, to taste

For Pico de Gallo:

3 large tomatoes, diced (toss the bits with excess liquid to prevent a watery dip)

DIRECTIONS:

In a large bowl, combine all base ingredients and mix well.
For Pico de Gallo: Add diced tomato and mix well.
For Guacamole: Add mashed avocado and mix well. Adjust ingredients to taste. Let chill in the fridge for at least an hour (this also allows the flavours settle together, creating an even better taste)

Enjoy with your favourite tortilla chips, or as a topping for your tacos (and more!)

BONUS MARGARITA RECIPE: 

- 1 1/2oz blanco tequila
- 1 oz orange liqueur (eg. Triple Sec, Cointreau)
- 3/4 oz fresh lime juice
Optional: 1/2oz simple syrup (or to taste) IceLime wedge and salt for rim (option to add a very light sprinkle of chilli powder for a spicy rim)

DIRECTIONS:

Swipe a lime wedge around the rim to wet the glass. Add salt (and chilli powder if using, mix into salt) to a shallow bowl or plate (make sure the rim will fit) and dip/roll the rim to coat with salt. Set glass aside.Add the first three ingredients (plus simple syrup, if using) to a cocktail shaker with a handful of ice cubes. Cover and shake well.Fill glass with desired amount of ice and strain margarita from the shaker into the glass. Garnish with additional lime wedge if you’d like, and enjoy!
